Moroccan Glazed Salmon

This one is all about the sauce! Deliciously complex, sweet and savory notes which complement the salmon beautifully. Also goes well with chicken.
Basic recipe provides enough glaze for 2-3 pieces of salmon. I usually double this just to make sure I have plenty.

Ingredients

Salmon fillets, 2 to 4 or a large side fillet
1 Tbsp brown sugar
1 tsp honey
2 tsp butter
2 Tbsp dijon mustard
1 Tbsp soy sauce (I use coconut aminos for lower sodium)
1 Tbsp olive oil
2 tsp ginger (can be powder or paste)

Instructions

Preheat oven to 350 F
Line a baking dish with foil or make a foil tray with upturned edges on a cookie sheet, grease with cooking spray, and place salmon skin side down.
Mix all sauce ingredients in a small pan over medium heat, until a nice glaze is formed, just slightly thickened.
Pour the glaze over the salmon, and bake 25 minutes until fish is no longer translucent and flakes apart easily.
