Fabulous Fajitas


A Tex-Mex classic, and SO easy to whip up for a quick dinner!
Recipe serves 4.

Ingredients

1 pound chicken breast, or tenderloins (steak, pork or turkey work fine also)
1 medium onion
1/2 large green bell pepper
1/2 large red bell pepper
Olive oil and butter
Low Sodium Fajita Seasoning (see recipe) - or you can use pre-packaged
8-10 flour tortillas
Sour cream
Shredded cheese, your preference
Salsa or hot sauce, optional

Instructions

Slice onion and peppers intoi strips, set aside.
Slice meat into strips, set aside on different plate.
Heat a large skillet on medium high, and melt 1-2 Tbsp of butter in it. Sautee / sear the veggie strips until softened and slightly charred. Season if desired - black pepper, salt, Mrs Dash table blend, for example. Set aside in clean serving dish, like a 9X13 casserole pan.
Add olive oil (2 Tbsp or so) to hot pan, then add the meat strips and cook thoroughly. Once browned / cooked, add about 1/4 cup of fajita mix (or one package) to the meat, and perhaps a small amount of water if needed. Stir and coat the meat, and do a final sear in the pan, to get that char as well. Remove meat and place in same serving dish as the veggies from earlier.
Arrange toppings on the counter, then heat the tortillas either in the microwave for 20 sec or by grilling them in the frying pan for a bit.
Build your fajitas as you like - sour cream, salsa, meat, peppers and onions, and shredded cheese for example. Typically two fajitas makes a serving.
