Breakfast Sandwiches


MUCH better than Micky D's!
Simple. "semi-homemade" and very versatile. I whip these up on a Sunday when we have company staying over, and they never fail to impress!
Recipe as described serves 4 (can be 8 if you make them original size)

Ingredients

Southern style big biscuits in a tube
5 large eggs - 4 for sandwiches, one for an egg wash
4 pieces of meat, your choice - ham, bacon, sausage, even deli turkey works
4 slices of good cheese - your choice, we like a nice sharp cheddar
"Everything Sprinkle" seasoning, Morton's has one that doesn't add salt
4 Tbsp of butter, unsalted if you have it
Mrs. Dash no salt Lemon Pepper seasoning


Instructions

Preheat oven to 350 F, line a cookie sheet with parchment paper.
Open the refrigerator biscuits, set them on a plate to warm.
Set out eggs to warm.
Slice your meat or set out patties, sized for your sandwich - (these will be fried in a pan later).
Choose your slices of cheese, set aside.
Take up two biscuits at a time, and tear and knead them together into one larger biscuit. Don't overwork, but mix well and form into a round and smoothed biscuit. Place the 4 large biscuits onto the lined baking sheet.
Make an egg wash by whisking one egg in a cup with a small splash of water, brush it onto each biscuit, then sprinkle the everything seasoning over each one. Bake at 350 F for 13 - 16 minutes, keep a close watch in the final few minutes to achieve fully baked, light brown and shiny tops but NOT burnt bottoms. Remember you can take them out a minute early and they will finish baking on the pan as you get things ready.
While the biscuits are baking, fry your meat slices in a pan to a good sear, then set aside on a plate.
To cook the eggs, you have a choice of methods. You want to achieve a compact patty made from a "muddled" egg. My method involves two non-stick metal small baking dishes - I put them directly on my stove with medium low heat. Melt a Tbsp of butter in each, tilt the pan to coat. Crack an egg into each, let sit about 30 sec then muddle with a plastic utensil - you just want to mix up the yolk and white a bit, without actually scrambling. Add lemon pepper to each egg. Cook until the egg is almost cooked through, the top will be a little wiggly when you take it out and set on the plate with the meat pieces. It will finish setting there. Repeat the process to cook the other two eggs. If you do not have similar pans, you can try a silicone egg ring (I've never found any that were heavy enough to stay in place) or simply free-cook the egg in a pan then fold it to your desired size to fit on the sandwich.
When the bicuits are baked, set the sheet on the back of your stove and finish cooking your eggs. Now you are ready to assemble the sandwiches.
Take one of your large biscuits which should have cooled enough to handle, and gently slice it open, laying the top and bottom out on a small plate. Layer the egg, meat and cheese on the bottom then place the top. Gently press the sandwich, and serve to your eager audience! Until your timing is learned, you might have to re-warm the sandwich right at the end with 30 sec in the microwave. Enjoy this delicious savory breakfast!
